Despite the pretty fluted flan dish, this bake looked like it had marched straight out of a school dinner canteen—especially with the dollop of custard on top. But don’t let appearances fool you. It tasted so good, and since it’s Saturday night, I thought I’d share the recipe.

The Recipe
Sponge Ingredients
110g self-raising flour
110g butter
110g sugar
2 eggs
1 tsp baking powder
Fruit Base
2 apples, sliced
A handful of fresh or frozen raspberries
Method
Layer the fruit at the base of your dish.
Cook for 2 minutes in the microwave until softened.
Add the sponge mixture on top and swirl gently into the fruit.
Bake for 20 minutes at 180°C.
Serve warm with custard (optional, but highly recommended for that nostalgic touch).
